Analisa Sofia Medina

On February 19,2016 we welcomed my sweet niece Analisa Sofia Medina into the world. Words can not express how proud I am of my sister for her dedication and patience during the whole labor process. She literally had the odds stacked against her but I was thankful that I was able to be by her side throughout most of it. I'm not going to lie, it was so hard at times to see my sister in so much pain. There was one point when she just started crying and I just started crying as well. I felt so helpless and as her "big sister" it was so hard to not be able to take all her pain away. I remember at one point crawling into the bed with her and just holding her while she shivered in pain and just prayed and prayed. She truly is one of the strongest women I know, and I am so proud and thankful for her. After a lil over 24 hour the docs and Jenni decided to make the best decisions for her and baby Sofie, and at 8pm our sweet little angel was here. She is absolutely beautiful and eve...

Baby Hoof

December 21st-I remember finding out I was pregnant, the only reason I took a test so early was because Cali (the furbaby) started looking at me strange and would just stare at me from the other side of the couch, I would even tell Jeremy, "babe, look at her, why is she just staring at me?" So, I was on Christmas break from school and running errands. Before heading the gym I was like ehhh I'm just going to stop at the dollar store and get a test because I didn't think it would work since it had only been a few weeks. Naturally I couldn't wait until after my workout to get home and rest so I decided I'll just take do it in one of the stalls in the gym hahah. So I did and right away there was a line, a faint line but clear as day. I remember  texting my friend Beth who is a nurse and showing her a picture and asking her...

What's for Dinner?

So I'm sure like many people when it comes to dinner you have your signature dishes. Mine is usually ground turkey tacos, chicken with veggies, baked chicken with sweet potatoes, ground turkey hobo hash and just more chicken (grilled) with salad. So Jeremy and I decided to try something different. We were watching Shark Tank (reruns) and we saw Blue Apron, we diced to give it a shot. The way blue Apron works is they have meals set up and delivery options. We decided to do 3 meals a week that serves 2. It was about 70 bucks but we figured we'd try it. The meals we had all were pretty good. My favorites, were the roast, pot pie and phily sandwich. The other 3 dishes were meatballs with Polenta, shrimp and rice and a cod with mashed potatoes. I liked the idea and it did give me new ideas for side dishes but, I'm so picky with everything I eat that I didn't really care for some of the ingredients such as watermelon raddish, polenta, mushrooms etc. but at least I tried it. ...
